1 pound Hillshire Farm Turkey or Beef smoked sausage, cut into 1/4 inch cubes
1 large chopped yellow onion
1 cup cup cornmeal
1 cup all-purpose flour, sifted
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon celery seed
1 teaspoon salt
2 eggs
1/2 cup whole milk
1/2 cup Sour cream
3 tablespoon Vegetable oil
1 can Creamed corn
1/2 cup chopped green chilies
1 cup Chopped yellow onion
1/4 cup Chopped cilantro
2 teaspoon Fresh minced thyme
1/2 teaspoon celery seed
1/2 tablespoons hot sauce or Tabasco
1 clove minced garlic
1/2 tablespoons red pepper flakes
1/4 tablespoons black pepper to taste
8 ounces Grated Pepper jack cheese
Garnish
1/2 cup Ranch Dressing
1/4 cup sour cream
Sauté Hillshire Farm smoked sausage, until brown and set aside.
Combine dry ingredients and stir in cornmeal.
Then in separate bowl mix wet ingredients. Beat egg slightly add milk, sour cream, cream corn, peppers, onions, oil and other seasonings.
Mix liquid and dry ingredients only to combine and stir in the cheese.
Cover the bottom of greased muffin tins with the sausage. Fill them two-thirds full with the batter. Bake at 400 degrees Fahrenheit for 15 minutes or until golden on the top.
Serve upside down (to show off the sausage) in a pool of the dressing mixture and garnish with some chopped cilantro on top.
