INGREDIENTS
1 can tomato paste
2 cans chicken stock
2 tablespoons dark brown sugar
1/4 cup prepared yellow mustard
1/4 cup honey
1/4 cup molasses
1/4 cup lemon juice
1 1/2 tablespoons Worcestershire sauce
1 1/2 teaspoons Mesquite liquid smoke
1/2 teaspoon ground sage
2 teaspoons chopped fresh thyme
1/4 teaspoon ground allspice
1/8 teaspoon ground cinnamon
2 teaspoons onion powder
3 cloves fresh garlic
1/2 teaspoon celery seed
2 teaspoons kosher salt
1/2 teaspoon fresh ground pepper
1 teaspoon corn starch dissolved in 1/4 cup cold water
1 stick melted butter
Over medium heat dissolve sugar, molasses, mustard and honey into chicken stock, tomato paste and simmer for 2 minutes. Add lemon juice, Worcestershire sauce, mesquite liquid smoke and stir together until completely mixed.
Simmer for 2 minutes. Stir in spices and garlic until completely combined. Simmer for 2 more minutes. Add cornstarch/water mixture and stir for one minute. Finish with the butter.
Reduce heat to lowest setting and simmer for 10 minutes without boiling. Stir often to prevent sticking.
This sauce is a great grilling sauce for steaks, pork chops, ribs, etc. Brush on meats while cooking.
Refrigerate remaining sauce and it will last for about a week in the refrigerator.
This sauce has a smokey, sweet flavor.
