INGREDIENTS
2 cups all-purpose flour
1/2 cup confectioners’ sugar
1/2 teaspoon of baking powder
3/4 cup white sugar
1/4 cup packed dark brown sugar
1/2 cup (1 stick) cold butter
1/2 cup cream cheese
1/2 teaspoon vanilla extract
1/2 teaspoon kosher salt
Directions:
Preheat oven to 320 degrees F.
In large bowl, cream butter, the cream cheese and the sugars until smooth.
Add the salt and vanilla extract and stir evenly to incorporate.
In same bowl, add 1 ½ cups of flour and mix until the dough is smooth and forms a ball.
Turn the dough onto a floured board and knead for 2 or 3 minutes. Add the additional flour as needed to keep the dough from sticking.
Press the dough into a baking pan to ½ inches thick. Prick with a fork to create steam vent holes and a “pretty” pattern.
Bake 25 to 30 minutes or until top is lightly browned at the edges. Remove from oven and cut into bars. Return to cool in oven for 30 minutes. Then dust the top with confectioners’ sugar. Serve warm or cool completely to serve later.
Option: Dip the end of the bar into melted chocolate and let cool on parchment paper.
