INGREDIENTS

2        cups fresh Green Beans
2        cloves of minced garlic
2        teaspoons chopped green onion
1/4     teaspoon fresh oregano
1/4     teaspoon fresh thyme
1/4     teaspoon celery seed
1/4     teaspoon fresh ground pepper
1/4     cup table salt
2        tablespoons olive oil


DIRECTIONS

  • Rinse vegetables and set aside


  • In a medium saucepan bring the water to a boil and add the salt


  • Pinch the stem end from the beans and leave the natural growing end


  • Drop the beans in the boiling water for only a minute until they are bright green (blanching)


  • Quickly remove and submerge them into a bowl of ice cold water until cold (shocking)


  • Remove from water and pat dry


  • In a large bowl, combine the oregano, green onion, thyme, celery seed, salt and pepper and the olive oil


  • Toss in the beans and coat thoroughly


GARNISH

  • Sprinkle with a teaspoon of chopped green onion
