INGREDIENTS
2 cups fresh Green Beans
2 cloves of minced garlic
2 teaspoons chopped green onion
1/4 teaspoon fresh oregano
1/4 teaspoon fresh thyme
1/4 teaspoon celery seed
1/4 teaspoon fresh ground pepper
1/4 cup table salt
2 tablespoons olive oil
DIRECTIONS
- Rinse vegetables and set aside
- In a medium saucepan bring the water to a boil and add the salt
- Pinch the stem end from the beans and leave the natural growing end
- Drop the beans in the boiling water for only a minute until they are bright green (blanching)
- Quickly remove and submerge them into a bowl of ice cold water until cold (shocking)
- Remove from water and pat dry
- In a large bowl, combine the oregano, green onion, thyme, celery seed, salt and pepper and the olive oil
- Toss in the beans and coat thoroughly
GARNISH
- Sprinkle with a teaspoon of chopped green onion
