INGREDIENTS

2        cups fresh sugar snap peas
2        cloves of minced garlic
2        teaspoons black bean sauce
2        teaspoons hoisin sauce
2        teaspoons minced fresh ginger
2        teaspoons chopped green onion
1/4     teaspoon fresh thyme
1/4     teaspoon celery seed
1/4     cup table salt
1        tablespoon sesame oil


DIRECTIONS

  • Rinse tomatoes, pat dry and set aside


  • In a medium saucepan bring the water to a boil and add the salt


  • Strip the tough fibers from the seams of the sugar snap peas by breaking the stem end and pulling them back


  • Drop the peas in the boiling water for only a few seconds until they are bright green (blanching)


  • Quickly remove and submerge them into a bowl of ice cold water until cold (shocking)


  • Remove from water and pat dry


  • In a large bowl, combine the black bean sauce, the hoisin sauce, the ginger, green onion, thyme, celery seed, salt and sesame oil


  • Toss in the peas and coat thoroughly


  • Toss in the tomatoes and coat thoroughly


GARNISH

  • Sprinkle with a teaspoon of chopped green onion
